Solubility and Gelling Information

Solubility: Dispersible in cold and totally soluble over 90ºC. Insoluble in vegetable oils, minerals and organic solvents.

Gelling: It occurs in combination with a calcium source when the solution becomes cold.

Preparation

Pour the powder (previously blended with other dry ingredients) over the water or vegetable milk, while it is quickly strred. Keep strring untl dispersion. Heat up untl complete dissoluton (70 - 80°C). Do not pour the liquid over the powder.
